Veggie Baked Sweet Potato


  • 6 medium sweet potatoes
  • 6 tablespoons low fat yogurt
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • Chopped tomato 1c
  • Chopped onion 1c
  • Minced garlic 1/4c
  • Cilantro 1/2c
  • Chives 1/2c


Heat oven to 400° F. Place the sweet potatoes on a baking sheet lined with foil. Bake until tender, about 30-45 minutes. Make a slit in the top of each sweet potato. Top with 1 teaspoon of onions, 1 teaspoon of tomatoes, 1 tablespoon of fat free yogurt and season with the salt, pepper, cilantro, chives and garlic.
