Crockpot Quinoa & Black Beans

  • 1 1/2 cups quinoa
  • 3 cups vegetable broth or water
  • 1 can black beans, drained & rinsed
  • 1 can diced tomatoes, drained
  • 1 packet taco seasoning
  • 1 small onion, diced

Saute onion in small amount of water  until soft. Spray crockpot with non-stick spray. Add onions & remaining ingredients. Cover & cook on high for 1 1/2 – 2 hours until liquid is absorbed. By Jenelle York, MS, RD

  1. Use Quinoa instead of bulgar in tabouhle (with parsley, mint,cucumber, tomato,onion,etc with a lemon vinaigrette)
    Good gluten-free alternative recipe.
    Try red quinoa for color & slightly diffeent taste.
    ALWAYS rinse well before cooking
