Caribbean Salsa


  • 1 medium bell pepper, diced
  • 1 small red onion, diced
  • 1 can black-eyed peas, rinsed
  • (no salt added/low sodium)
  • 1 can black beans, rinsed
  • (no salt added/low sodium)
  • 1 can of corn (no salt added/low sodium)
  • 1 mango, peeled and diced
  • 3 Tbsp canola oil
  • 2 Tbsp vinegar
  • 1 tsp cumin
  • ¼ tsp salt (can omit to reduce sodium)
  • ½ tsp ground black pepper
  • ¼ cup fresh cilantro, chopped


Wash and prepare fresh and canned ingredients. Combine all ingredients in a mixing bowl. Refrigerate until serving.
